About Tebiyamaya’s dashi

Tebiyamaya’s dashi is made with all natural ingredeients, with no additives or preservatives.

Tennen Dashi


■Ingredients: dried bonito, dried pacific round herring, dried mackerel, dried sardines, kombu (sea kelp), shiitake mushroom

As the basis of all Japanese cooking, dashi can be used in all types of dishes, such as miso soup and nimono (simmered vegetables and meat).
The Tennen Dashi, ‘tennen’ meaning pure in Japanese, is purely made with ingredients that compose the dashi.
With no intentionally added salt flavors nor additives or preservatives, one can experience the true delicious flavors of the dashi.


■How to make dashi stock with the Tennen dashi packets


1. Heat 1&3/4 of a cup of water in a saucepan with one dashi bag.

2. After the water comes to a boil, reduce heat to medium and simmer for 5 to 6 minutes.

3. Remove packet once enough flavor has seeped out. The stock is ready to use.

■How to cook miso soup

1.Add your choice of ingredients into the dashi stock and bring it to a boil.

2.Turn off the heat once the ingredients are cooked, then carefully stir in the miso.

3.Salt to your preferred taste and the soup is ready.

Tennen Dashi with soy sauce and salt

An all-rounder type of dashi made of natural dashi ingredients with added salt and powdered soy sauce.

  1. Heat 1&3/4cups of water in a saucepan with one dashi bag.

Dashi Soup Base

This soup base combines the aroma of Tebiyamaya’s dashi and the richness of traditional mirin (subtly sweet Japanese cooking wine).
Pour, mix, or dip; the soup base can be used in a variety of ways to accompany your cooking.
But to begin with, please try it by pouring it over a raw egg on fresh cooked rice.

■Recipe: Chilled Dashi Vegetables

Lightly fry your choice of vegetables, and refrigerate in a tub of the dashi soup base as the vegetables absorb the flavor.
Add a slice of lemon into the base for an extra refreshing taste.
